1st Anniversay

This weekend was absolutely gorgeous! On Saturday we went to the Congaree National Park (just about 15 miles southeast of Columbia) to get out and enjoy the beautiful day. Unfortunately, parts of it were flooded but we were still able to walk a couple of miles on the boardwalk. In the evening I pulled out our new highly festive tablecloth from Ecuador and made a typical Ecuadorian dish: soup, empanadas, and fried plantains. We also had homemade wine from my friend Alicia, yum!

On Sunday (our anniversary), Britton surprised me with a trip to Charleston to the Magnolia Plantation. With a history deeply rooted in slavery and cotton, rice, and iron mining, the plantation is currently open for tours of the gardens, the home, and the grounds. We had a picnic there with a gift basket that was conveniently sent by my parents the day before. Later, we went to Hank's Seafood Restaurant where 2 dozen roses were waiting on the table for us (apparently my husband was scheming with his mother to plan a romantic evening) and the waiter delivered a bottle of wine, compliments of my mother- and sister-in-law, neat! It was a really special day and most of all I have a really special husband! We are looking forward to many more fantastic years.
